Check out Gladinet Cloud Desktop at http://www.gladinet.com. Its free and makes it very easy to backup google docs and spreadsheets. You can mount your google docs folders as local folders on your desktop and then move files back and forth between google and your desktop like you would with any other local folder. You can also create scheduled backups of local content to Google Docs or a Redundant Array of Cloud Storage.

Honestly I would be pretty devastated if google just collapsed now that you made me think about it. I have a lot of non critical but still useful data hidden away in various google apps. I've been meaning to read the articles here on personal data protection as it was recommended to me but haven't had a chance yet.

Where does the TOS say you can't download all your mail? Gmail's help docs has an entry explaining how to backup all your email with POP.

With the addition of feedburner into Google's empire, you also need to be careful about keeping your feed within your grips as well. For anyone that is using feedburner and isn't already using its 'My Brand' feature, I *highly* suggest taking a close look at http://FeedPhoenix.com as a very fast and simple way to make sure that you can take your feeds out of the hands of FeedBurner/Google in the future.
